Breakfast is the most important meal of the day; it is the catalyst for starting your metabolism, and giving your body the jumpstart it needs to take on the day. From cereal to eggs, there are a ton of choices when it comes to breakfast food. But how do we make something that tastes good and is also healthy?
Protein Pancakes are a great way to get all your major nutrients in while having a tasty and hearty meal. With adequate fats, carbohydrates and protein, these pancakes will give you a great balance to start your day. Paired with some sliced fruit (i.e. banana, blueberries, or strawberries) and some sugar free syrup, you have a guilt-free way to enjoy a breakfast classic. The Power Cakes recipe can be found below. 2 scoops of any protein powder (vanilla provides the best flavor)
1/4 cup unsweetened coconut milk
1 tsp cinnamon
1 cup oats
1 tsp baking powder
2 egg whites
Mix together all ingredients until you achieve a pancake-like consistency.
Preheat a pan over medium heat, then spray pan with non-stick spray.
Place mix into pan and cook both sides until mix is fully cooked through. Test with a toothpick.
